The Much Maligned Potato
I don't know about you, but there is not a single vegetable out there that I adore more than the potato.
And what a story it has. The history books give it credit for nearly destroying the economy of a country.
Who could possibly eat fast food without "French fries" or a scrumptious steak without a "baked potato?" Then there was Mr. Potato Head, a great guy who gave us hours of fun. Now suddenly the potato is
known as that dreaded "carb" that has fattened a whole nation.
Well, the truth is that the potato is an excellent source of complex carbohydrates which our bodies NEED for energy. They also contain fiber, protein, Vitamins A, B-complex and C, and minerals such as
copper, iron, magnesium, and potassium. They only become BAD for you when you deep fry them, smother them in butter or top them with sour cream and cheese.And not only that…but did you know that:
v The alkaline juice of the potato neutralizes stomach acid and relieves upset stomach,
heartburn and even peptic ulcersv
Warm potatoes applied externally help relieve joint and muscle pain and improve circulation v
Raw potatoes reduce itching and skin inflammation
Try this: - For muscle and bone pain: Boil one pound of potatoes in their skins until tender. Place in a linen sack and mash.
Apply the sack to the affected area (lying a towel underneath if too hot). Cover the sack
tightly with a large woolen or thermal blanket. Remove sack after it has cooled down completely.
- For swelling and itching from contact dermatitis (poison ivy, etc) or insect bites: Peel and slice a potato. Apply a slice to the affected skin until the potato warms up.
Repeat as necessary. (also good for bruises). I guess, all in all, potatoes really can be considered "comfort" food. ~~~~~~~~~More Info~~~~~~~~~
